Blue Cheese Deviled Eggs

Ingredients:

  • 6 large eggs

  • ¼ cup mayonnaise

  • 2 tablespoons sour cream (or Greek yogurt)

  • 2 tablespoons crumbled blue cheese (like Statesboro Blue)

  • 1 teaspoon Dijon mustard

  • Salt and black pepper, to taste

  • Optional toppings: extra blue cheese crumbles and hot sauce

Instructions:

  1. Place eggs in a pot, cover with cold water, bring to a boil, then cover and turn off the heat. Let sit for 10–12 minutes. Cool in ice water, then peel.

  2. Slice eggs in half and carefully remove yolks. Place yolks in a bowl and mash with a fork.

  3. Add mayo, sour cream, Dijon, and blue cheese. Stir until smooth and creamy. Season with salt and pepper to taste.

  4. Spoon or pipe the mixture into the egg white halves.

  5. Top with extra blue cheese, and hot sauce.
