ABOUT US

Bold, cave-aged, and built for real flavor

Statesboro is all about artisan blue cheese and gorgonzola with a bold bite and a creamy finish, shaped by time in natural limestone caves.

Why “Statesboro”?

If you’ve heard of “Statesboro Blues,” you’re already in the neighborhood. The name nods to the famous song tied to Statesboro, Georgia, and the “blues” attitude fits the cheese: soulful, punchy, and hard to forget.

What we make:

Statesboro Blue Cheese

Our classic blue is cave-aged for 60+ days using farm-fresh, unpasteurized cow’s milk, creating a creamy, sharp, piquant blue with striking marbling.

How to enjoy it: crumbled over salads and dressings, paired with honey, or served alongside steak and grilled mushrooms.

Statesboro Gorgonzola

A robust blue with bold veining and deeper complexity, made with unpasteurized cow’s milk and aged over 90 days in natural limestone caves. It’s great for crumbling, slicing fresh, pairing with jams, and melting into cream sauces.

Statesboro Smoked Blue Cheese

Our “smoky upgrade.” Cold-smoked over natural hickory, this version keeps the creamy, bold blue character and adds rich smoky depth. Great on cheese boards, tossed into salads, or stirred into sauces.

Perfect for boards and beyond

Statesboro blues show up everywhere: steak nights, burgers, salads, dips, and weeknight pastas. If you need ideas, our recipe collection is full of ways to cook with blue and gorgonzola.
